Hi Jon, It could be that the introduction of insects isn't such a bad thing and maybe the head chef should not be to worried. The protein levels of caterpillars is approx 60%, good levels of amino acids, high in copper, zinc,iron some B vitamins and approx 600kcal/100g. The introduction of some chitin(shell) has been approved by the Japanese for adding to cereals to improve fibre and calcium. On the otherhand it sounds gross, give me a burger!
